Lava Cake Recipe

½ cup coconut oil, plus more for greasing
8 ounces dark chocolate, chopped
½ cup strong black coffee or espresso (optional)
3 large eggs
3 egg yolks
¾ cup granulated sugar
½ cup all-purpose flour
4 squares semisweet or dark chocolate (from 1 chocolate bar)
Ice cream or whipped cream, for serving (optional)
Cocoa powder and/or chocolate shavings, for serving
1.Preheat the oven to 375°F with a rack in the center position. Grease four 8-ounce ramekins with coconut oil.
2.In a small saucepan, melt the dark chocolate and coconut oil together over low heat, stirring often, until well combined and smooth, about 5 minutes. Remove the pan from the heat and stir in the coffee.
3. In a medium bowl, whisk together the eggs, egg yolks, sugar, and flour until combined. Stir in the melted chocolate mixture. Divide the batter evenly among the prepared ramekins. Place 1 square of chocolate into the center of each ramekin and gently push it into the batter. Place the ramekins on a baking sheet.
4.Bake until the sides of the cakes are set but the centers are still slightly loose, 15 to 20 minutes. Let the cakes cool in the ramekins for 1 minute, then run a knife around the sides and invert them onto plates. Top each cake with a scoop of ice cream and dust with cocoa powder. Serve immediately.
